Cucumber cake is delicious, healthy easy to make eggless steamed cake.
It is very midly sweet in taste and loaded with goodness of semolina, coconut, jaggery and flavourful cucumber.
Lets enjoy this soft, moist, unique textured cake in steamed style.
- In a pan, roast 3/4 cup broken wheat dalia (lapsi rava) till it turns slightly brown.
- Add 1/4 cup semolina(rava) and roast till it turns slightly brown.
- Add water, 1cup grated cucumber and 1cup jaggery and mix well.
- Add 1/4 cup grated coconut, 10 cashew nuts, 10 raisins and salt and mix well. Keep stiring and cook till the mixture forms a thick paste.
- In a container, add ghee & the cake mixture.
- Place the container in pressure cooker, then remove whistle and cover it with a lid and steam Steam for 40 minutes.
- Tasty cucumber cake is ready.
